Pulled Brisket Hand Pies
2 1 lb cheek meats
1 tbsp white miso
1 bottle beer
1c chicken broth
1-2 tbsp honey
4 cloves garlic
1/2 c -1 c bbq sauce (depends on how saucy you like it)
Rub the cheek meat with miso. Add all the remaining ingredients besides bbq sauce into the pan and bake at 325 F covered for 2-2.5 hours or until fork tender and shreds easily. Cool 15 minutes before shredding and tossing with bbq sauce Set aside.
1 package Puff pastry
1/4 c Caramelized onions
1 Egg
Roll the puff pastry and slice into squares or cut into circles using a cookie cutter or glass. , Add 1-2 heaping tsp beef and 1/2 tsp onions. Cover, crimp and seal and then brush with egg. Slice slits for air to flow. Bake at 350 F on a cookie sheet for 20-25 minutes and serve warm with bbq sauce.
