Quick Pickle Recipes 


Pickling base: 

  • 1.5 cups sugar 

  • ¼ cup salt 

  • 2 cups apple cider vinegar 

  • 2 cups hot water 

  • 1 tsp black peppercorns 

  • 3-4 cloves garlic 



Cucumbers: 

  • 2 sliced Persian cucumbers 

  • ½ tsp coriander seed

  • ½ tsp mustard seed 

  • Optional: dried chili pepper 


Brussels sprouts: 

  • 1 cup thinly sliced Brussels sprouts 

  • 1 tsp fennel or caraway seed 


Radish: 

  • ½ cup sliced radish 

  • ½ tsp fennel seed 


Green beans: 

  • 2 tbsp fresh dill 

  • 2 cloves garlic 

  • 1 tsp mustard seed 

  • Optional: dried chili pepper 


Onion/shallots: 

  • 2 thinly sliced shallots or 1 thinly sliced small onion 

  • 1 tbsp sumac 


  1. Heat the sugar, salt, vinegar, water, pepper and garlic in a pot till all the sugar and salt is dissolved and the mixture is hot to touch. 

  2. Fill a clean jar with your vegetable of choice. Cover with the vinegar brine 

  3. Leave on the counter for 30 minutes to pickle before using.

  4. Store in the fridge for about 2 weeks
