Quick Pickle Recipes
Pickling base:
1.5 cups sugar
¼ cup salt
2 cups apple cider vinegar
2 cups hot water
1 tsp black peppercorns
3-4 cloves garlic
Cucumbers:
2 sliced Persian cucumbers
½ tsp coriander seed
½ tsp mustard seed
Optional: dried chili pepper
Brussels sprouts:
1 cup thinly sliced Brussels sprouts
1 tsp fennel or caraway seed
Radish:
½ cup sliced radish
½ tsp fennel seed
Green beans:
2 tbsp fresh dill
2 cloves garlic
1 tsp mustard seed
Optional: dried chili pepper
Onion/shallots:
2 thinly sliced shallots or 1 thinly sliced small onion
1 tbsp sumac
Heat the sugar, salt, vinegar, water, pepper and garlic in a pot till all the sugar and salt is dissolved and the mixture is hot to touch.
Fill a clean jar with your vegetable of choice. Cover with the vinegar brine
Leave on the counter for 30 minutes to pickle before using.
Store in the fridge for about 2 weeks
