Sesame Sticky Sweet Potatoes
Sesame caramel sweet potatoes
1 lb. assorted sweet potatoes (white, purple and orange) scrubbed and halved
1/4 cup brown sugar, divided
2 tablespoons sesame oil
1 teaspoon rice vinegar
Salt to taste
1 tablespoon white miso
Drizzle of oil
Roasted sesame seeds
Place all the items on a sheet pan besides about one tablespoon of brown sugar.
Mix together and completely coat your potatoes.
Turn all the potatoes, so they are cut side up. Sprinkle the remaining brown sugar on top. Cover with additional sesame seeds
Flip your sweet potatoes, so they are cut side down. Bake in a single layer on a baking sheet at 400° for 30 to 35 minutes or until potatoes are baked through and develop caramelized edges.
Dipping sauce:
1/2 cup vegan sour cream
1/4 cup Mayo
1 tablespoon mirin
2 tablespoon rice vinegar
1 clove garlic, grated
Mix ingredients and serve chilled with sweet potatoes
Yield: serves 4-6 as a side dish
