Rice Pilaf Blend
1 box plain Near East rice pilaf
1 orange, reserve the zest, peel and then slice thinly …I used a blood orange
1 shallot, diced
1/2 c parsley, chopped
1/4 c mint leaves, chopped
1 Avocado, sliced
1 15 oz can chick peas or white beans, rinsed and drained
12-14 cerigolini olives
3-4 tbsp of olive or grapeseed oil
1 tbsp honey
2 tablespoons rice vinegar
Salt and pepper to taste.
In a large pot, add the rice pilaf and chickpeas. Prepare according to package directions. Add in the remaining ingredients. Toss to integrate. Season to taste.
