Gluten Free/ Pesach Pizza

Pesach flour blend: .
2 c almond flour
1 1/3 c tapioca flour
2/3 c coconut flour
Mix and store in sealed container. Use 1:1 to replace flour in any recipe. .

Pizza:
3 c flour blend (plus more for sprinkling)
4.5 tsp baking powder
1 tsp salt
2 tbsp olive oil
1 Tbsp honey
11 oz water
To top:
Pizza sauce or freshly grated tomatoes
Cheese .
Mix ingredients into a large bowl. It will first be clumpy but eventually get some stretch. Pat into a smooth ball and coat in olive oil. Turn until the whole ball is covered.
Cover and rest in the fridge for 10 minutes.
Divide the dough in two and rest one section on lightly floured parchment paper. Gently press into a round flat circle with some slightly beveled edges for crust. Place on top of a baking sheet and bake at 350F for 15-20 mins or until lightly browned. Top with 1/4 c pizza sauce and 1/2 c cheese or to taste. Bake for another 15 minutes or till cheese bubbles and melts. Sit for 5-10 minutes before slicing! .
