Fried Rice
Fried Rice:
4-5 cloves of garlic, minced
1 bunch scallions, thinly sliced
4-5 tbsp oil
3-4 cups cooked rice
2 tbsp soy sauce
1 tbsp rice vinegar (unseasoned)
1 tsp sesame oil plus a dash more
1/4 c hoisin sauce
2/3 c frozen peas
2 eggs
Sriracha for serving.
In a large wok or frying pan heat the oil and sauté the garlic and scallion bottoms until fragrant - about 2-3 minutes on medium heat. Add the rice and allow@it to heat through breaking up any clumps.
Mix together the sesame oil, rice vinegar, soy sauce and hoisin sauce. Pour it over the rice and mix it in until integrated. Then mix in the frozen peas.
Create a well in the center of your rice of blank frying pan space and add the dash of sesame oil. Pour in your two eggs and scramble them. Allow them to firm up a little before folding them into the rice.
Top with the tops of the scallions and for with sriracha if desired. Serve piping hot.
