Cheese Latkes
3 ounces cream cheese
3 eggs
3/4 cup all-purpose flour
3 tablespoons sugar
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
1 teaspoon vanilla extract
1 1/4 cups ricotta cheese
1/4 cup farmer cheese
Add all the ingredients besides the cheese into bowl and whisk until smooth. Fold in the cheeses until integrated.
Add a tbsp of oil to the pan. Coat the skillet and a drop in 1/4 c of the batter at a time into the pan and fry on medium for 2-3 minutes per side. Or until cooked through.
Serve with sour cream powdered sugar or maple syrup.
